Carrots: a humble yet delicious Thanksgiving essential. Carrots not only add some color to your table, but also provide the added benefits of vitamin A, fiber, and beta-carotene. This quick and easy recipe adds a new twist to the classic side dish with additional flavor from green peppers and rosemary. Rosemary pairs wonderfully with the earthy flavor of carrots, and is a great solution if you are trying to reduce the use of salt or saturated fat without skimping on any of the flavor.
