Fruit Shrub
- Fresh or frozen fruit, partially thawed
- Sugar
- Vinegar (5% acidity)
If using fresh fruit, wash fruit under cool running water. Mash equal parts fruit and sugar together and pour into a sterilized jar. Let sit in the refrigerator for 2-3 days, stirring and mashing every day. Strain fruit from syrup into a measuring cup. Add 1/2 to 1 part vinegar to 1 part syrup. Label and date and store in a sterilized jar in the refrigerator for up to 1 month.
Flavored Simple Syrup
- 1 cup sugar
- 1 cup water
- 2 cups fruit of choice
- 1 cup fresh herbs (optional)
Wash fruit and herbs under cool running water. Combine sugar, water, fruit, and herbs (optional) in a medium saucepan. Bring to a boil, stirring to combine, and reduce heat to medium or medium-low. Simmer for 5 minutes. Strain syrup into a sterilized glass jar. Label and date and store in the refrigerator for up to 1 month.
Suel Rojo de al Altena (Soul of the Highlands)
- 1.5 parts tequila blanco (optional)
- 1 part fresh beet juice
- 1 part fresh lime juice
- 3/4 part simple syrup
- 1 part ginger beer
- fresh mint
Combine first 4 ingredients in a cocktail shaker with ice and shake for 10-15 seconds. Strain into a glass with ice and top with ginger beer and fresh mint.
