Kale or Spinach Dip
This savory and creamy cottage cheese dip combines low-fat cottage cheese and fresh kale or spinach into a smooth, nutritious snack enriched with garlic, lemon juice, and optional red pepper flakes for a kick of heat.
Ingredients
- 1 ½ teaspoons oil (canola, olive, or vegetable)
- ½ teaspoon garlic powder
- 3 cups ¾-inch chopped kale or spinach
- ⅛ teaspoon salt
- 1 cup low-fat cottage cheese
- 1 tablespoon lemon juice
- ½ teaspoon red pepper flakes (optional)
Instructions
- Clean the kitchen area and wash hands with soap and water.
- Gently rub fresh kale or spinach under cold running water and pat dry with clean paper towels or a salad spinner. Packaged produce labeled pre-washed shouldn't be washed again.
- If using kale, remove kale leaves from the center stalk before chopping.
- Heat oil in a pan over medium heat.
- Add garlic, kale or spinach, and salt.
- Cook, uncovered, stirring occasionally until tender, about 3 to 4 minutes.
- Let it cool.
- Transfer cooked kale or spinach to a blender.
- Add cottage cheese to the same blender and puree until smooth.
- Add lemon juice and red pepper flakes (optional). Blend until combined.
Storage
- For safety, refrigerate any leftovers in an airtight container as soon as possible, or within 2 hours, and use within 4 days.
