Kale or Spinach Dip

This savory and creamy cottage cheese dip combines low-fat cottage cheese and fresh kale or spinach into a smooth, nutritious snack enriched with garlic, lemon juice, and optional red pepper flakes for a kick of heat.

Ingredients
  

  • 1 ½ teaspoons oil (canola, olive, or vegetable)
  • ½ teaspoon garlic powder
  • 3 cups ¾-inch chopped kale or spinach
  • teaspoon salt
  • 1 cup low-fat cottage cheese
  • 1 tablespoon lemon juice
  • ½ teaspoon red pepper flakes (optional)

Instructions
 

  • Clean the kitchen area and wash hands with soap and water.
  • Gently rub fresh kale or spinach under cold running water and pat dry with clean paper towels or a salad spinner. Packaged produce labeled pre-washed shouldn't be washed again.
  • If using kale, remove kale leaves from the center stalk before chopping.
  • Heat oil in a pan over medium heat.
  • Add garlic, kale or spinach, and salt.
  • Cook, uncovered, stirring occasionally until tender, about 3 to 4 minutes.
  • Let it cool.
  • Transfer cooked kale or spinach to a blender.
  • Add cottage cheese to the same blender and puree until smooth.
  • Add lemon juice and red pepper flakes (optional). Blend until combined.

Storage

  • For safety, refrigerate any leftovers in an airtight container as soon as possible, or within 2 hours, and use within 4 days.
