
Stewed Black Beans
Make delicious stewed black beans easily with this budget-friendly recipe. Using dry black beans you'll create flavorful homemade beans. Enjoy these easy black beans as a side or main dish. Great for meal prepping. Try serving with rice for a complete meal!
Ingredients
- ½ pound dry black beans
- 1-½ tablespoons oil (canola, olive, or vegetable)
- ¼ cup onion, finely chopped (1 medium onion is about 1 cup chopped)
- 1 clove garlic, minced (1 garlic clove is about 1 teaspoon minced)
- 1-½ tablespoons jalapeno, finely chopped (optional)
- ¼ teaspoon salt
- ½ teaspoon cumin powder
- 1 bay leaf (optional)
- 4 cups water
Instructions
- Clean the kitchen area and wash hands with soap and water.
- Gently rub produce under cold running water. Scrub firm produce with a clean vegetable brush under cold running water.
- Soak the beans using the method of your choice - traditional soak, hot soak, or quick soak.
- Drain and rinse the black beans.
- In a large heavy bottom pot, heat the oil over medium heat.
- Once the oil is hot, add the onion, jalapeno (optional), and garlic. Add ¼ teaspoon of salt.
- Stir and cook until the vegetables have softened, 3 to 5 minutes. Reduce heat if vegetables are browning.
- Add cumin and bay leaf (optional). Stir and cook for 1 to 2 minutes.
- Add rinsed black beans and add 4 cups of water or just enough water to cover the beans.
- Bring to a simmer, do not boil. Cook on a simmer until beans are tender, 1.5 to 2.5 hours. Can be transferred to a crock pot or oven for easy cooking.
- Remove bay leaf if added.
- Season to taste with salt and pepper.
- Suggest serving with rice.
Storage
- Refrigerate any leftovers as soon as possible or within 2 hours for safety.
- Use leftovers within 4 days and reheat to 165˚F before consuming.
- Leftovers can also be frozen in freezer-grade containers or bags and used within 3 to 4 months for best quality.
