Serves: 4 Ingredients 1/2 cup chopped onion 1 tablespoon oil 2 cups tomatoes, chopped 1/2 teaspoon black pepper 1-1/2 cups low-fat cheese, shredded Directions In saucepan, cook onion in oil until tender. Add tomatoes and pepper and heat. Add cheese and heat slowly until melted. Can be served on toast, rice or pasta.
