1/2 cup chopped onion
1 tablespoon oil
2 cups tomatoes, chopped
1/2 teaspoon pepper
1-1/2 cups low-fat cheese, shredded
- In saucepan, cook onion in oil until tender.
- Add tomatoes and pepper and heat.
- Add cheese and heat slowly until melted.
- Can be served on toast, rice or pasta.
