White Bean Hummus

Makes 12 servings | Serving size: 2 Tablespoons


¼ cup olive oil
2 Tablespoons peeled and sliced garlic cloves
2 (15.8 ounce each) cans of rinsed and drained Great Northern or cannellini beans,
¼ cup fresh lemon juice
1 teaspoon ground cumin
2 Tablespoons chopped parsley
½ Tablespoon salt
1 teaspoon white pepper
Optional:  teaspoon cayenne pepper


  1. In a sauce pan, combine oil and garlic over medium heat until garlic is lightly browned.
  2. Let cool slightly.
  3. Place rinsed and drained Great Northern or cannellini beans in food processor and add oil, garlic, lemon juice, cumin, parsley, salt, white pepper and cayenne (optional).
  4. Blend in blender or food processor until smooth.
  5. Serve with raw vegetables, pita bread, bagel chips or tortilla chips.
