{"id":6555,"date":"2018-08-09T12:48:51","date_gmt":"2018-08-09T16:48:51","guid":{"rendered":"https:\/\/extension.umaine.edu\/food-health\/?page_id=6555"},"modified":"2018-08-09T12:49:11","modified_gmt":"2018-08-09T16:49:11","slug":"easy-cauliflower-broccoli","status":"publish","type":"page","link":"https:\/\/extension.umaine.edu\/food-health\/recipes\/easy-cauliflower-broccoli\/","title":{"rendered":"Easy Cauliflower and Broccoli"},"content":{"rendered":"<p>Serves: 8 | Serving size: 1\/2 cup<\/p>\n<h3>Ingredients<\/h3>\n<p>4 cups of cut cauliflower florets<br \/>\n4 cups of cut broccoli florets<br \/>\n1\/2 cup of water<br \/>\n4 ounces of fat-free cream cheese, cubed<br \/>\n1\/2 cup of plain lowfat yogurt<br \/>\n1\u20444 cup of skim or 1% milk<br \/>\n11\u20442 cups of shredded, reduced-fat, sharp cheddar cheese<br \/>\n10 crackers, crushed (about 1\/3 cup)<br \/>\n3 tablespoons of grated Parmesan cheese<\/p>\n<h3>Directions<\/h3>\n<ol>\n<li>Wash the broccoli and cauliflower. Cut the florets into small bite-size pieces.<\/li>\n<li>Place the vegetables and 1\u20442 cup of water in a large skillet. Cover the skillet with a lid and allow the vegetables to steam over high heat for 3 minutes or until they are tender.<\/li>\n<li>Add milk to the skillet. Reduce the heat to low.<\/li>\n<li>Cut the cream cheese into cubes and then to the skillet. Allow the cream cheese to melt.
