{"id":6679,"date":"2018-08-15T11:26:30","date_gmt":"2018-08-15T15:26:30","guid":{"rendered":"https:\/\/extension.umaine.edu\/food-health\/?page_id=6679"},"modified":"2018-08-15T11:26:50","modified_gmt":"2018-08-15T15:26:50","slug":"hearty-mixed-greens","status":"publish","type":"page","link":"https:\/\/extension.umaine.edu\/food-health\/recipes\/hearty-mixed-greens\/","title":{"rendered":"Hearty Mixed Greens"},"content":{"rendered":"<p>Makes 4 servings | Serving size: 1 cup<\/p>\n<h3>Ingredients<\/h3>\n<p>4 cups collard greens<br \/>\n4 cups Swiss chard<br \/>\n8 cups spinach<br \/>\n1 Tablespoon olive oil<br \/>\n4 cloves garlic, crushed<br \/>\n\u00bd cup chopped parsley<br \/>\n\u00bc cup chopped basil<br \/>\n\u00bd teaspoon chili powder<br \/>\n\u00bc cup lemon juice<br \/>\n\u00bc teaspoon salt<\/p>\n<h3>Directions<\/h3>\n<ol>\n<li>Wash all greens. Place the collards in a large steamer over boiling water. Steam 2 minutes.<\/li>\n<li>Add the Swiss chard and steam 2 minutes more.<\/li>\n<li>Add the spinach and steam 4 more minutes.<\/li>\n<li>When tender turn greens out into a sieve and squeeze out the excess liquid with the back of a wooden spoon. Chop all greens.<\/li>\n<li>Combine olive oil, garlic, parsley, basil, chili powder, and lemon juice in a large skillet and heat until warm.<\/li>\n<li>Add the chopped greens and salt, and mix thoroughly.
