{"id":794,"date":"2011-03-22T10:59:29","date_gmt":"2011-03-22T14:59:29","guid":{"rendered":"https:\/\/extension.umaine.edu\/food-health\/?page_id=794"},"modified":"2021-08-02T14:38:38","modified_gmt":"2021-08-02T18:38:38","slug":"stuffed-squash","status":"publish","type":"page","link":"https:\/\/extension.umaine.edu\/food-health\/recipes\/stuffed-squash\/","title":{"rendered":"Stuffed Squash"},"content":{"rendered":"<div class=\"responsive-video\"><iframe loading=\"lazy\" title=\"&quot;Mainely Dish&quot; Recipe Video: Stuffed Squash\" width=\"1268\" height=\"713\" src=\"https:\/\/www.youtube.com\/embed\/r3S3MlTDvR8?wmode=transparent&amp;rel=0&amp;feature=oembed\" frameborder=\"0\" allow=\"accelerometer; autoplay; clipboard-write; encrypted-media; gyroscope; picture-in-picture; web-share\" allowfullscreen><\/iframe><\/div>\n<p><strong>Recipe Ingredients and Instructions to Download and Print:\u00a0<\/strong><a href=\"https:\/\/extension.umaine.edu\/food-health\/wp-content\/uploads\/sites\/9\/2020\/10\/Mainely-Dish-Recipe-Stuffed-Squash.pdf\" target=\"_blank\" rel=\"noopener noreferrer\">Stuffed Squash (PDF)<\/a><\/p>\n<p>Serves: 4<\/p>\n<h3>Ingredients<\/h3>\n<p>1 medium squash, any type, halved lengthwise and seeds removed<br \/>\n1\/2 cup onion, chopped<br \/>\n1 clove garlic, minced<br \/>\n1\/2 teaspoon sage<br \/>\n1\/2 teaspoon thyme<br \/>\n1\/2 cup celery, diced<br \/>\n3 tablespoons oil<br \/>\n1 cup whole wheat or plain bread crumbs<br \/>\n1\/2 cup cheese, shredded<\/p>\n<h3>Directions<\/h3>\n<ol>\n<li>To easily cut winter squash, follow these steps:\n<ul>\n<li>Poke multiple holes\/slits in the squash with a fork or tip of a knife (this helps the air release as the squash heats up)<\/li>\n<li>Microwave on high for about 3 minutes<\/li>\n<li>After the squash has cooled down enough to touch, cut the squash in half lengthwise avoiding the stem<\/li>\n<li>Clean out the squash by removing the seeds<\/li>\n<\/ul>\n<\/li>\n<li>Cook onions, garlic, sage, thyme, and celery in oil. Cook over low heat until onions are soft.<\/li>\n<li>Add bread crumbs. Continue to cook over low heat for 5 -10 minutes.<\/li>\n<li>Remove from heat and mix in the cheese.<\/li>\n<li>Pack stuffing into the cleaned out squash.
