His attitude has changed a lot now that he is enjoying fresh eggs for breakfast, and his personal favorite is a pickled egg! I wish I could say that I\u2019ve come to enjoy his anniversary gift to me of a weed whacker, but not yet. However, there is a long summer ahead of me to get acquainted with my new lawn tool.<\/span><\/p>\n<p><span style=\"font-weight: 400\">When you\u2019ve got backyard chickens you\u2019ve usually got plenty of eggs this time of year. You\u2019ll also find plenty of vendors with eggs for sale at your local farmers&#8217; market or at farm stands. Why not try making some pickled eggs to enjoy on seasonal salads or straight from the refrigerated jar? Two of my hens lay much smaller eggs than their coop mates so I don\u2019t include their smaller eggs in my dozen to pickle.<\/span><\/li>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">Make sure to use a sterilized jar to store your pickled eggs. Read about <a href=\"https:\/\/nchfp.uga.edu\/how\/can_01\/sterile_jars.html\" target=\"_blank\" rel=\"noopener noreferrer\">how to sterilize jars<\/a>.<\/span><\/li>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">A wide-mouth quart-sized jar will hold a dozen eggs.<\/span><\/li>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">Peeling fresh hard-boiled eggs can be difficult. I keep the dozen I plan to pickle in a separate, labeled egg carton in the refrigerator and give them 3-5 days before I boil them.<\/span><\/li>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">Use vinegar that is labeled 5% acidity to ensure a safe pH environment for pickling.<\/span><\/li>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">Keep pickled eggs refrigerated and use within 3\u20134 months for best quality.<\/span><\/li>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">Use Ball\u00ae storage lids and save your (now hard to find) 2-piece dome lid and screw bands for your canning needs.<\/span><\/li>\n<\/ul>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone wp-image-10150 size-medium\" src=\"https:\/\/extension.umaine.edu\/food-health\/wp-content\/uploads\/sites\/9\/2021\/06\/IMG_6006-preview-resized-300x225.jpg\" alt=\"\" width=\"300\" height=\"225\" srcset=\"https:\/\/extension.umaine.edu\/food-health\/wp-content\/uploads\/sites\/9\/2021\/06\/IMG_6006-preview-resized-300x225.jpg 300w, https:\/\/extension.umaine.edu\/food-health\/wp-content\/uploads\/sites\/9\/2021\/06\/IMG_6006-preview-resized-768x576.jpg 768w, https:\/\/extension.umaine.edu\/food-health\/wp-content\/uploads\/sites\/9\/2021\/06\/IMG_6006-preview-resized-105x79.jpg 105w, https:\/\/extension.umaine.edu\/food-health\/wp-content\/uploads\/sites\/9\/2021\/06\/IMG_6006-preview-resized-317x238.jpg 317w, https:\/\/extension.umaine.edu\/food-health\/wp-content\/uploads\/sites\/9\/2021\/06\/IMG_6006-preview-resized-423x317.jpg 423w, https:\/\/extension.umaine.edu\/food-health\/wp-content\/uploads\/sites\/9\/2021\/06\/IMG_6006-preview-resized-634x476.jpg 634w, https:\/\/extension.umaine.edu\/food-health\/wp-content\/uploads\/sites\/9\/2021\/06\/IMG_6006-preview-resized-846x635.jpg 846w, https:\/\/extension.umaine.edu\/food-health\/wp-content\/uploads\/sites\/9\/2021\/06\/IMG_6006-preview-resized-951x713.jpg 951w, https:\/\/extension.umaine.edu\/food-health\/wp-content\/uploads\/sites\/9\/2021\/06\/IMG_6006-preview-resized-500x375.jpg 500w, https:\/\/extension.umaine.edu\/food-health\/wp-content\/uploads\/sites\/9\/2021\/06\/IMG_6006-preview-resized-rotated.jpg 1000w\" sizes=\"auto, (max-width: 320px) 85vw, (max-width: 768px) 67vw, (max-width: 1024px) 62vw,300px\" \/><\/p>\n<p><span style=\"font-weight: 400\">My favorite pickled egg recipe comes straight from the National Center for Home Food Preservation <a href=\"https:\/\/nchfp.uga.edu\/how\/can_06\/pickled_eggs.html\" target=\"_blank\" rel=\"noopener noreferrer\">pickled egg fact sheet<\/a>:<\/span><\/p>\n<h2><span style=\"font-weight: 400\">Dilled Pickled Eggs<\/span><\/h2>\n<p><span style=\"font-weight: 400\">12 peeled, hard-boiled eggs<\/span><\/p>\n<p><span style=\"font-weight: 400\">Brine<\/span><\/p>\n<p><span style=\"font-weight: 400\">1-1\/2 cups white vinegar (5% acidity)<br \/>\n<\/span><span style=\"font-weight: 400\">1 cup water<br \/>\n<\/span><span style=\"font-weight: 400\">3\/4 teaspoon dill weed or dill seed<br \/>\n<\/span><span style=\"font-weight: 400\">1\/4 teaspoon white pepper or whole peppercorns<br \/>\n<\/span><span style=\"font-weight: 400\">1 tablespoon pickling &amp; canning salt<br \/>\n<\/span><span style=\"font-weight: 400\">1\/4 teaspoon mustard seed<br \/>\n<\/span><span style=\"font-weight: 400\">1\/2 teaspoon minced onion<br \/>\n<\/span><span style=\"font-weight: 400\">1\/2 teaspoon minced garlic or 1 peeled garlic clove<\/span><\/p>\n<ol>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">Bring brine ingredients to a boil, reduce the heat and simmer for 5 minutes.\u00a0\u00a0<\/span><\/li>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">Pack peeled, hard-cooked eggs loosely into a warm, pre-sterilized quart jar (or other similar size container which can be closed tightly). There needs to be plenty of pickling solution, enough to completely cover the eggs.\u00a0\u00a0<\/span><\/li>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">Pour the pickling solution over the eggs in the jar, cover, and refrigerate immediately.\u00a0<\/span><\/li>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">Allow 2 weeks for the eggs to develop flavor and enjoy pickled eggs within 3 \u2013 4 months.
