Last year, I saw this idea going around on social media with scary titles like \u201cWhy you should never eat leftover rice,\u201d \u201cRice is toxic,\u201d \u201cReheated rice or Fried Rice syndrome,\u201d but I hadn\u2019t looked into it until now. So here\u2019s what we need to know.<\/p>\n<h3>What is \u201cReheated Rice Syndrome\u201d?<\/h3>\n<p>It\u2019s food poisoning caused by the bacterium Bacillus cereus (B. cereus). It\u2019s naturally found in soil and plants, including starchy foods like rice and pasta. Symptoms include vomiting and diarrhea, and typically resolve within 24 hours.<\/p>\n<h3>What causes Reheated Rice Syndrome?<\/h3>\n<p>The main cause is cooling and storing rice incorrectly.<\/p>\n<ul>\n<li>The <strong>Temperature Danger Zone<\/strong>: If rice sits at room temperature (<strong>40-140\u00b0F<\/strong>) for more than 2 hours, the B. cereus spores grow and produce heat-stable toxins.<\/li>\n<li>The <strong>Toxins<\/strong>: Because the toxins are <strong>heat-stable<\/strong>, reheating the rice to a high temperature might kill the bacteria, but it won\u2019t remove the toxins that make you sick.<\/li>\n<\/ul>\n<h3>How to Safely Store and Eat Leftover Rice<\/h3>\n<ul>\n<li>Store cooked rice in the refrigerator within <strong>two hours<\/strong> of cooking or <strong>one hour<\/strong> if the room temperature is 90\u00b0F or hotter.<\/li>\n<li>If you have a large batch of rice, <strong>store it in multiple containers<\/strong> so it can cool off quickly.<\/li>\n<li>When you reheat rice, be sure it reaches an <a href=\"https:\/\/extension.umaine.edu\/food-health\/2024\/03\/01\/internal-temperatures\/\">internal temperature of <strong>165\u00baF<\/strong><\/a> as measured by a food thermometer.<\/li>\n<li>Make sure to eat the rice within <a href=\"https:\/\/www.foodsafety.gov\/keep-food-safe\/foodkeeper-app\" target=\"_blank\" rel=\"noopener\"><strong>3-4 days<\/strong> (FoodKeeper App)<\/a>.<\/li>\n<\/ul>\n<h3>5 Recipes to Use Leftover Rice In<\/h3>\n<p>Now that we know how to keep our leftover rice safe, here are some recipes you can make with leftover rice!<\/p>\n<ul>\n<li><a href=\"https:\/\/extension.umaine.edu\/food-health\/recipes\/chicken-corn-rice-casserole\/\" target=\"_blank\" rel=\"noopener\">Chicken, Corn, and Rice Casserole<\/a> &#8211; A simple and protein-filled meal.<\/li>\n<li><a href=\"https:\/\/extension.umaine.edu\/food-health\/recipes\/cowboy-beans-rice\/\">Cowboy Rice and Beans<\/a> &#8211; A fast vegetarian barbecue flavor option.<\/li>\n<li><a href=\"https:\/\/extension.umaine.edu\/food-health\/recipes\/fried-rice\/\" target=\"_blank\" rel=\"noopener\">Fried Rice<\/a> &#8211; A delicious, easy weeknight dinner.<\/li>\n<li><a href=\"https:\/\/extension.umaine.edu\/food-health\/recipes\/make-ahead-mexican-rollups\/\" target=\"_blank\" rel=\"noopener\">Make-Ahead Mexican Roll Ups<\/a> &#8211; My favorite make-ahead freezer meal.<\/li>\n<li><a href=\"https:\/\/extension.umaine.edu\/food-health\/recipes\/nola-red-beans-and-rice\/\" target=\"_blank\" rel=\"noopener\">NOLA Red Beans and Rice<\/a> &#8211; A spicy, protein-rich meal for that extra bowl of rice.<\/li>\n<\/ul>\n<p>Help get this important information out!
