1(15-ounce) canlow-sodium beans (black, cannellini, chickpeas, great northern white, kidney)
2cupscorn (low-sodium canned, fresh, frozen)
3cupscooked brown rice, cooked according to package directions
2cupsshredded cheese (cheddar, hot pepper, Mexican, or Monterey Jack)
1cupsalsa
12(8-inch)whole-wheat tortillas
Instructions
Clean the kitchen area and wash hands with soap and water.
Corn Preparation
If using canned corn, drain and rinse in a colander, then place corn in a large bowl.
If using fresh corn on the cob, husk it, rinse under cold running water, cook using your preferred method, remove kernels, then place corn in a large bowl.
If using frozen corn, cook according to package directions, drain, then place corn in a large bowl.
Other Ingredient Instructions
Drain and rinse beans in a colander, then place beans in the large bowl with the corn.
Spoon 1⁄2 cup filling on each tortilla and roll up.
Wrap each roll up tightly in plastic wrap.
Storage and Reheating
For safety, refrigerate any leftovers in an airtight container as soon as possible, or within 2 hours. Use leftovers within 4 days and reheat to 165°F before consuming.
Leftovers can also be frozen in freezer-grade containers or bags and used within 3 to 4 months for best quality.
To reheat a frozen roll up remove the plastic wrap, wrap the roll up in a damp paper towel, set microwave on medium power, and heat for 3 to 4 minutes or until internal temperature reaches 165°F.

Dry beans can be substituted for canned beans. Be sure to soak and cook dry beans before using.
