Prepare Vegetables<\/strong><\/h3>\n\n\n\n<p>Wash and chop vegetables into the desired shape you would like for pickles. These tender spring vegetables do not require any cooking prior to pickling.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\"><strong>Step 2. Select Flavorings<\/strong><\/h3>\n\n\n\n<p>Get creative with fresh or dry flavorings. Mix and match from the following suggested list of fresh and dried herbs and spices to add up to 2 tablespoons per jar.<\/p>\n\n\n\n<figure class=\"wp-block-table\"><table><thead><tr><th><b>Dry<\/b><\/th><th><b>Fresh<\/b><\/th><\/tr><\/thead><tbody><tr><td>Bay leaves<\/td><td>Jalapeno or habanero pepper<\/td><\/tr><tr><td>Celery seed<\/td><td>Dill<\/td><\/tr><tr><td>Chile peppers<\/td><td>Garlic<\/td><\/tr><tr><td>Cumin seed<\/td><td>Oregano<\/td><\/tr><tr><td>Dill seed<\/td><td>Shallot<\/td><\/tr><tr><td>Mustard seed<\/td><td>Horseradish<\/td><\/tr><tr><td>Pickling spice<\/td><td>&nbsp;<\/td><\/tr><tr><td>Peppercorns<\/td><td>&nbsp;<\/td><\/tr><tr><td>Tumeric<\/td><td>&nbsp;<\/td><\/tr><\/tbody><\/table><\/figure>\n\n\n\n<h3 class=\"wp-block-heading\"><strong>Step 3. Pack Vegetables<\/strong><\/h3>\n\n\n\n<p>Pack prepared vegetables snugly into washed pint-sized canning jars or similar sized glass or heatproof plastic containers with lids.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\"><strong>Step 4. Make Brine<\/strong><\/h3>\n\n\n\n<p>Make either sweet or sour brine using the following recipes:<\/p>\n\n\n\n<figure class=\"wp-block-table\"><table><thead><tr><th><b>Sour Brine<br><\/b><\/th><th><b>Sweet Brine<br><\/b><\/th><\/tr><\/thead><tbody><tr><td>3 cups white vinegar (or apple cider)<\/td><td>3 cups white vinegar (or apple cider)<\/td><\/tr><tr><td>3 cups water<\/td><td>3 cups water<\/td><\/tr><tr><td>3 Tbsp. canning\/pickling salt<\/td><td>2 Tbsp. canning\/pickling salt<\/td><\/tr><tr><td>2 Tbsp. sugar<\/td><td>1 \u00bd cups sugar<\/td><\/tr><\/tbody><\/table><\/figure>\n\n\n\n<p>Bring brine to a boil and let boil for 2 minutes. Remove from heat.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\"><strong>Step 5. Fill Jars with Brine<\/strong><\/h3>\n\n\n\n<p>Carefully fill the jars with brine to within 1\/2 inch of the top of the rim. Place the lids on the jars and refrigerate. Allow flavor to develop for 1 \u2013 2 days before serving.
