Session 1 (9:00am – 10:30am)
1. Pollinators & the Gardens that Feed Them – Jean Vose, Knox-Lincoln County Beekeepers
Pollinators include bees of all kinds, including wasps [both predatory and parasitic], birds, bats, and butterflies as well as moths and other beneficial creatures found in our gardens. She will discuss how to create an environment to attract and support them. This includes identification of these creatures, how they work in gardens and eco-friendly tips as well.
2. Solar Energy & What’s on the Horizon -David Gibson, Solar Design Specialist
Join David Gibson of ReVision Energy for a solar energy workshop as well as a discussion about battery storage and electric vehicle charging. Guests will have the opportunity to learn how solar electric (photovoltaic) systems work. Additionally, guests attending the workshop can learn how heat pump technology and water heating, are an effective & efficient way to immediately reduce fuel usage. There will also be an update on Maine solar energy policy and what’s on the horizon for solar energy.
3. Aloha! Growing Ginger & Turmeric in Maine – Prentice Grassi, Villageside Farm
Did you know you can grow your own ginger & turmeric in Maine? Join Prentice Grassi who will help you get started and include the basics of growing them in high tunnels in the Northeast.
4. Thinking Inside the Box: Green Burials – Chuck Lakin, Home Funeral Educator & Woodworker

Learn how the Amish use simple and practical technologies in their homes, on their farms and in their work.
6. Making Traditional Amish Sausage – Matthew Secich, Unity’s Amish Charcuterie
Join Matthew Secich for a demonstration on the technique for making your own sausage, including smoking and curing. Fresh sausage will be prepared during the workshop, gloves will be provided and samples of the finished product will be available.
7. The Basics of Making Great Yogurt – Eric Rector, Monroe Cheese Studio
Eric will review everything involved in making a great batch of yogurt every time, with a demonstration of the process and techniques. We will cover the development of cultured dairy products in history, as well as the many delicious treats you can make once you have a great batch of yogurt on hand. (*not hands on)

Join apple expert John Bunker and learn about different heirloom apple varieties, rootstocks, and how to grow and preserve these heritage trees.

11. Grow Your Own Hops – Lily Calderwood, UMaine Extension
With microbreweries becoming ever more popular, learn the ins and outs of growing hops for the home gardener or commercial grower.
12. How to Make Tempeh and Natto – Anna and Roy Antaki, Weeping Duck Farm
Learn how to make your own Tempeh and Natto at home, two ancient soybean-based Far Eastern fermented foods, with excellent nutritional properties.
13. Meat Rabbits for the Homestead – Ed Hamel, The Milk Room Farmstand
From breed selection to harvest, Ed Hamel will take you through the care of growing your own meat rabbits, and will include a demonstration on the process of skinning, dressing out and butchering a rabbit.

16. Organically Growing and Using Medicinal Herbs in Maine – Deb Soule, Avena Botanicals
Join herbalist & medicinal herb gardener Deb Soule for her colorful slide show, where she will speak to the significance of growing medicinal herbs for people & pollinators & the importance of replanting Native medicinals as a healing gesture. Deb will include detailed and practical guidelines on growing, gathering and using several medicinal herbs including anise-hyssop, Ashwagandha, Black cohosh, blue vervain, calendula, comfrey, holy basil, lemon balm, nettle, oats, rose, Schisandra and Solomon’s seal.

17. Insect Pests of Gardens and Landscapes – Clay Kirby, UMaine Extension
Common insect pests of gardens and landscapes will be highlighted as well as integrated pest management (IPM) tactics. Pest and beneficial insect identification will be covered. Organic approaches to management will be emphasized and weather influences noted.
18. The Secret Life of Soil – Caragh Fitzgerald, UMaine Extension
Digging deep into soils, we will discuss recent advances in science including soil microbiology and use this to help you improve your garden soils, soil health, and crop production.
19. Preserving with Lacto Fermentation – Anna and Roy Antaki, Weeping Duck Farm
Learn how to preserve the garden’s harvest and its nutritional value using the ancient, natural technique of lacto-fermentation.

21. Rigging, Rolling & Raising, The Art of Moving Immovable Objects – Robert Riversong, Design and Construction Consultant CLASS IS FULL & CLOSED
Before the days of motors, hydraulic lifts, and heavy machinery, people improvised simple mechanical systems to make hard work easy. Beginning with an introduction to the history of rigging and its modern variations, we’ll examine ropes and knots, and look at a variety of pulley systems, principles of leverage and friction-reduction, anchoring systems, and personal safety.

Learn the basics of weaving traditional baskets out of pine needles. The workshop will cover harvesting and preparing the materials, weaving techniques, and all students will have the opportunity to weave a pine needle basket themselves.
23. The Science of Homebrewing – Roy Curtis , Jon Thurston, Zafra Whitcomb, Frosty Bottom Brewing
The crew of Frosty Bottom Brewing will discuss the various styles of beer and emphasize how each ingredient and step in the process contributes to making the kind of beer the brewer wants to achieve. They will also cover equipment, ingredients, and how to avoid pitfalls.
24. Tick Talk: Lyme Borreliosis & Related Tick-borne Disorders ~ What You Don’t Know Can Hurt You – Dr. Beatrice Szantyr, MD
Do you know what ticks look like? Can you identify the ones that pose a threat to people and their companion animals? Do you know how to protect yourself from getting the diseases ticks can transmit and still enjoy gardening, farming, hiking, and just being outdoors? Dr. Beatrice Szantyr has spent more than 25 years looking at these questions and their answers. Her presentation about Lyme and related tick-borne diseases explores the vectors, hosts, and habitats that place people at risk of these preventable diseases. She gives guidance on how to prevent tick bites for you and your family, what to do if you have an attached tick, and how to recognize Lyme disease early, in its most treatable form. She will also talk about later disease, and of some of the challenges of diagnosis and treatment. More information than you thought you needed, because in this case ~what you don’t know can hurt you.
Proceeds from the event go to a Waldo county based scholarship for a graduating high school senior who plans to pursue post secondary education..
