What should I plant for a winter cover crop in my organic vegetable garden?

I have an organic vegetable garden (approximately 30×30) and want to plant a winter cover crop that will be turned over in the spring. My soil is currently well balanced. I will be able to seed mid September. What should I plant?

Winter cover crops are a fantastic way to protect your soil and enhance both its texture and nutrient base, so kudos to you for your interest! UMaine has two resources in particular on the topic that will help you decide which crop will work best for your needs and when/how to plant it:

Bulletin 1170: Cover Cropping for Success

While some of the language focuses on larger scale production, the information can easily be adapted to home settings.
