Enhancement of Microbial Food Safety by Risk Analysis

The meeting and accommodations will be held at the Courtyard Portland Downtown/Waterfront in Portland Maine.

A full day meeting will be held on Thursday, October 26 with Allagash brewery tour and luncheon. A half day meeting will be held on Friday, October 27. An informal group dinner will be planned for Wednesday, October 25, should you arrive in time for dinner. Please email Faith Critzer (faithc@utk.edu) a one to two page written project update, including contact information of University Members for distribution to meeting attendees.

  • 7:30 – 8:30 AM — Full breakfast
  • 8:30 – 11:00 AM — Reporting (at Courtyard)
    • Snack at 10:00 AM
  • 11:30 – 3:30 PM — Brewery tours and lunch (Allagash Brewery)
  • 3:30 – 5:00 PM — Open to explore Portland
  • 6:30 PM: Dinner at Bayside Bowling

Friday Oct. 27

  • 8:00 – 9:00 AM — Full breakfast
  • 9:00 AM – Noon — Reports
    • Snack at 10:30 AM
  • 12:00 PM — Closing remarks


To the meeting: You will be flying into Portland Maine Airport, (PWM). The airport is approximately 10 minutes from the hotel. The hotel offers a free shuttle. You need to contact the hotel when you arrive to arrange a ride. There are car rentals available at the airport with many choices. For those who are renting cars or would like to be part of a carpool, please indicate this in your registration. Taxis/Uber/Lyft are also available.


The Courtyard Portland Downtown/Waterfront, 321 Commercial Street, Portland ME, 04101, is providing a special rate for this meeting, $165 plus tax. Please use Group Attendee Code “S1056: Food Safety Meeting” when making reservations. The rooms will be blocked at this price until September 15. You will need to make your own reservations. Breakfast, Lunch, and Dinner Arrangements

Breakfast will be included in your registration fee October 26 and 27.

Dinner will not be included with your registration fee October 25 (Additional $35, 4-course meal includes gratuity). We will be arranging reservations at the Kings Head Pub across the street from the hotel. If you want to be included in the reservation, please indicate this on the reservation form and we will add the $35 onto the final registration cost. Please indicate on the registration page if you have any dietary restrictions.

Lunch/tour on October 26 is included in the registration fee. This will be at the Allagash Brewery (catering). We have a bus to take us to the brewery and back to the hotel. Pickup at the hotel will be at 11:30 AM and the bus will depart Allagash at 3:00 PM. There are several breweries in this industrial park that you can explore after the Allagash tour and lunch.

Dinner on October 26 is included in the registration fee. Bayside bowling and dinner.
