Broccoli and Carrot Stir-Fry

Serves: 4


1 tablespoon oil
1 teaspoon garlic, minced
1 teaspoon ginger
2 cups broccoli, cut into flowerets
3 medium carrots, sliced thin
1 onion, sliced thin
2 tablespoon water
1 teaspoon soy sauce


  1. In a large skillet heat the oil briefly. Add the garlic and ginger, and stir-fry for 15 seconds.
  2. Add the broccoli, carrots and onion, tossing the vegetables to mix them well. Add the water, cover the skillet, and cook the vegetables for 3 minutes over medium heat.
  3. Remove the cover, turn the heat up to high, and cook the vegetables, stirring them 5 minutes longer or until the vegetables are tender-crisp.
  4. When the vegetables are cooked, mix in the soy sauce.
