Chicken Cacciatore
Makes 4 servings
Ingredients
1 small onion, chopped
¼ cup water
1 cup canned tomatoes
½ cup tomato puree or sauce
½ teaspoon garlic powder
½ teaspoon oregano
1/8 teaspoon pepper
4 chicken pieces
Directions
- Boil onion in a covered 1-quart saucepan in water until tender. Do not drain.
- Add tomatoes, tomato puree or sauce, garlic powder, oregano and pepper to onions. Simmer 10 minutes to blend flavors.
- Place chicken in frying pan. Pour tomato mixture over chicken.
- Cook, covered, over low heat until chicken is tender, about 45 minutes.
- Uncover and cook 15 more minutes to thicken tomato sauce.
