
Chicken Cacciatore
Delight your taste buds with this classic Italian dish, Chicken Cacciatore. Tender chicken simmered in a flavorful tomato sauce with onions and seasonings creates a hearty meal, perfect for entertaining guests. Serve over pasta or alongside crusty bread.
Ingredients
- 1 small onion, chopped
- ¼ cup water
- 1 cup canned tomatoes
- ½ cup tomato puree or sauce
- ½ teaspoon garlic powder
- ½ teaspoon oregano
- ⅛ teaspoon pepper
- 4 chicken pieces

Instructions
- Clean the kitchen area and wash hands with soap and water.
- Gently rub produce under cold running water.
- Boil onion in a covered 1-quart saucepan in water until tender. Do not drain.
- Add tomatoes, tomato puree or sauce, garlic powder, oregano and pepper to onions.
- Simmer 10 minutes to blend flavors.
- Place chicken in frying pan.
- Wash counter, utensils, and hands after touching raw poultry. Do not rinse raw poultry.
- Pour tomato mixture over chicken.
- Cook, covered, over low heat until chicken is tender, about 45 minutes.
- Uncover and cook 15 more minutes to thicken tomato sauce.
- Cook until the internal temperature of the chicken reaches 165℉.
Storage
- Refrigerate any leftovers as soon as possible or within 2 hours for safety.
- Use leftovers within 4 days and reheat to 165˚F before consuming.
- Leftovers can also be frozen in freezer-grade containers or bags and used within 3 to 4 months for best quality.
