Chicken Cacciatore

Delight your taste buds with this classic Italian dish, Chicken Cacciatore. Tender chicken simmered in a flavorful tomato sauce with onions and seasonings creates a hearty meal, perfect for entertaining guests. Serve over pasta or alongside crusty bread.

Ingredients
  

  • 1 small onion, chopped
  • ¼ cup water
  • 1 cup canned tomatoes
  • ½ cup tomato puree or sauce
  • ½ teaspoon garlic powder
  • ½ teaspoon oregano
  • teaspoon pepper
  • 4 chicken pieces

Instructions
 

  • Clean the kitchen area and wash hands with soap and water.
  • Gently rub produce under cold running water.
  • Boil onion in a covered 1-quart saucepan in water until tender. Do not drain.
  • Add tomatoes, tomato puree or sauce, garlic powder, oregano and pepper to onions.
  • Simmer 10 minutes to blend flavors.
  • Place chicken in frying pan.
  • Wash counter, utensils, and hands after touching raw poultry. Do not rinse raw poultry.
  • Pour tomato mixture over chicken.
  • Cook, covered, over low heat until chicken is tender, about 45 minutes.
  • Uncover and cook 15 more minutes to thicken tomato sauce.

Storage

  • Refrigerate any leftovers as soon as possible or within 2 hours for safety.
  • Use leftovers within 4 days and reheat to 165˚F before consuming.
  • Leftovers can also be frozen in freezer-grade containers or bags and used within 3 to 4 months for best quality.
