Green Bean & Broccoli Salad with Ginger Dressing

Looking for a different type of salad? This simple yet flavorful dish combines fresh green beans and broccoli with a delicious ginger dressing, making it suitable for cooks of any skill level.

Servings 4 1 cup

Ingredients
  

  • 2 cups cut green beans (fresh or frozen)
  • 2 cups broccoli pieces (fresh or frozen)
  • ¼ cup water

Ginger Dressing

  • 2 tablespoons low sodium soy sauce
  • 1 teaspoon vinegar
  • ½ teaspoon oil (canola, olive, or vegetable)
  • 1 teaspoon honey
  • ¼ teaspoon ground ginger
  • 1 teaspoon sesame seeds (optional)

Instructions
 

  • Clean the kitchen area and wash hands with soap and water.
  • Gently rub fresh produce under cold running water.
  • Steam fresh green beans using the microwave or stovetop. If using frozen green beans, cook according to package directions. Drain and set aside.
  • Steam fresh broccoli using the microwave or stovetop. If using frozen broccoli, cook according to package directions. Drain and set aside
  • Whisk ingredients for the dressing together. Set aside.
  • Drain water green beans and broccoli; mix in dressing while still warm.
  • Let vegetables chill in the refrigerator until ready to serve.

Storage

  • Refrigerate any leftovers as soon as possible or within 2 hours for safety.
  • Use leftovers within 4 days and reheat to 165˚F before consuming.
  • Leftovers can also be frozen in freezer-grade containers or bags and used within 3 to 4 months for best quality.
