Green Bean & Broccoli Salad with Ginger Dressing
Looking for a different type of salad? This simple yet flavorful dish combines fresh green beans and broccoli with a delicious ginger dressing, making it suitable for cooks of any skill level.
Ingredients
- 2 cups cut green beans (fresh or frozen)
- 2 cups broccoli pieces (fresh or frozen)
- ¼ cup water
Ginger Dressing
- 2 tablespoons low sodium soy sauce
- 1 teaspoon vinegar
- ½ teaspoon oil (canola, olive, or vegetable)
- 1 teaspoon honey
- ¼ teaspoon ground ginger
- 1 teaspoon sesame seeds (optional)
Instructions
- Clean the kitchen area and wash hands with soap and water.
- Gently rub fresh produce under cold running water.
- Steam fresh green beans using the microwave or stovetop. If using frozen green beans, cook according to package directions. Drain and set aside.
- Steam fresh broccoli using the microwave or stovetop. If using frozen broccoli, cook according to package directions. Drain and set aside
- Whisk ingredients for the dressing together. Set aside.
- Drain water green beans and broccoli; mix in dressing while still warm.
- Let vegetables chill in the refrigerator until ready to serve.
Storage
- Refrigerate any leftovers as soon as possible or within 2 hours for safety.
- Use leftovers within 4 days and reheat to 165˚F before consuming.
- Leftovers can also be frozen in freezer-grade containers or bags and used within 3 to 4 months for best quality.
