Healthy Salad with Ginger Dressing
Makes 4 servings | Serving size: 1 cup
2 cups green beans, cut
2 cups broccoli, pieces (fresh or frozen)
¼ cup water
2 Tablespoons soy sauce, low sodium
1 teaspoon vinegar
½ teaspoon oil
1 teaspoon honey
¼ teaspoon ginger powder, or ½ teaspoon fresh ginger, grated
1 teaspoon sesame seeds, optional
- Microwave green beans with water in covered bowl on high for 2 to 3 minutes. Remove cover carefully, allowing steam to escape, stir green beans and add broccoli pieces. Cover and microwave together on high for 2 minutes. (If using frozen green beans and/or broccoli, follow microwave directions on packaging.)
- Whisk ingredients for dressing together. Set aside.
- Drain green beans and broccoli; mix in dressing while still warm. Let vegetables chill in refrigerator until ready to serve (at least 10 minutes).
