Experience the delicious convenience of Make-Ahead Mexican Rollups, a flavorful, easy freezer meal. These tortilla rollups are filled with cheese, salsa, corn, beans, and rice, offering a perfect make-ahead meal.

Ingredients
  

  • 1 (15-ounce) can low-sodium beans (black, cannellini, chickpeas, great northern white, kidney)
  • 2 cups corn (low-sodium canned, fresh, frozen)
  • 3 cups cooked brown rice, cooked according to package directions
  • 2 cups shredded cheese (cheddar, hot pepper, Mexican, or Monterey Jack)
  • 1 cup salsa
  • 12 (8-inch) whole-wheat tortillas

Instructions
 

  • Clean the kitchen area and wash hands with soap and water.

Corn Preparation

  • If using canned corn, drain and rinse in a colander, then place corn in a large bowl.
  • If using fresh corn on the cob, husk it, rinse under cold running water, cook using your preferred method, remove kernels, then place corn in a large bowl.
  • If using frozen corn, cook according to package directions, drain, then place corn in a large bowl.

Other Ingredient Instructions

  • Drain and rinse beans in a colander, then place beans in the large bowl with the corn.
  • Add in rice, cheese, and salsa.
  • Stir until combined.
  • Spoon 1⁄2 cup filling on each tortilla and roll up.
  • Wrap each roll up tightly in plastic wrap.

Storage and Reheating

  • For safety, refrigerate any leftovers in an airtight container as soon as possible, or within 2 hours. Use leftovers within 4 days and reheat to 165°F before consuming.
  • Leftovers can also be frozen in freezer-grade containers or bags and used within 3 to 4 months for best quality.
  • To reheat a frozen roll up remove the plastic wrap, wrap the roll up in a damp paper towel, set microwave on medium power, and heat for 3 to 4 minutes or until internal temperature reaches 165°F.

Notes

  • You can serve this filling mixture on lettuce, kale, or spinach for a salad, or use it as a dip.
  • Dry beans can be substituted for canned beans. Be sure to soak and cook dry beans before using.
