New Wave French Toast

Makes 4 servings | Serving size: 2 slices


2 egg whites
2 whole eggs
½ cup fat-free milk
2 teaspoons sugar
¼ teaspoon vanilla
8 slices bread, whole-wheat or firm white
Cinnamon to flavor


  1. Preheat oven to 425°F.
  2. Spray bottom of baking dish with nonstick spray.
  3. In a shallow bowl or pie plate, combine egg whites, eggs, milk, sugar and vanilla.
  4. One-by-one, dip each slice of bread in the mixture, turning to coat both sides. Place in baking dish.
  5. Pour remaining batter over bread.
  6. Sprinkle with cinnamon.
  7. Bake 15 minutes on one side, and 10 minutes on other side.
  8. Serve immediately or freeze in individual portions for later use. Serve with topping of your choice. Try fresh fruit, apple or blueberry sauce or warm stewed prunes.
