Note: This recipe makes 4 jars of mix. Give this gift with a new muffin tin or holiday muffin cup liners.
Creating the Mix:
Ingredients
Baking mixture ingredients:
4 ½ cups all-purpose flour
1 cup nonfat dry milk
2 tablespoons baking powder
1⁄3 cup + 1 tablespoon canola oil
Additional ingredients:
1 ½ cups rolled oats (not instant)
1⁄3 cup sugar
½ teaspoon cinnamon
Directions
- Use 4 quart-sized wide-mouth jars
- Combine dry ingredients in a large bowl and stir.
- Cut in oil until the mixture is free of lumps.
- In each quart jar place the following, in layers:
- 1 ½ cups baking mixture (see above)
- 1 ½ cups rolled oats (not instant)
- 1⁄3 cup sugar
- ½ teaspoon cinnamon
- In each of the 4 plastic bags, place ½ cup raisins. Squeeze out air and seal.
- Add 1 bag of raisins to each jar and cover with the jar lid.
- Attach gift tag instructions for the final product.
Note: Store in the refrigerator and use within 1 month.
Cooking the Recipe:
Ingredients
1 jar Oatmeal Raisin Muffin Mix
1 egg
2/3 cup water
Cooking spray
Directions
- Preheat oven to 425°F.
- Mix egg and water in a large bowl.
- Add contents of the jar, except raisins.
- Stir slightly; the batter should be lumpy. Add raisins to the batter.
- Line muffin tins with baking cups and spray lightly with cooking spray.
- Fill muffin cups 2/3 full.
- Bake at 425°F for 18 to 20 minutes or until golden brown.
