Quick Pickles

Serves: 24


7 cups cucumbers
1 cup onion
1 cup green pepper
2 cups sugar
1 cup vinegar
1 tablespoon salt
1 tablespoon sugar
1 tablespoon celery seeds


  1. Cut cucumbers, onion and green pepper very thin.
  2. Combine sugar, vinegar, salt and celery seeds. Mix well.
  3. Pour mixture over vegetables. Cover and refrigerate for 5 days before serving. Stir twice each day.
