The Make-ahead Mexican Roll Ups is one of the recipes I use repeatedly because I can make the wraps in large batches and freeze them for future use. This was great for when I was meal-prepping for maternity leave. I knew with a new baby, I would need an easy nutritious meal that I could pull out of the freezer one at a time or in a batch, based on what I planned for meals during the week.

Thawing isn’t necessary. (Yay for last second meals!) I just took the roll up out of the plastic wrap, put it on a plate, and popped it in the microwave for 3-4 minutes. I will note, if texture matters to you, the wrap gets very soft if you reheat it from the freezer. To fix this, you could prepare the inside mixture and freeze that. Then when you want to use it as a meal, thaw the mixture, heat it, and then put the mixture in a fresh wrap.

This is a versatile recipe. If you don’t like wraps, you can serve this as a salad or use it as a dip. If you prefer a more protein packed meal, you can add cooked meat like lean ground beef or turkey or shredded chicken to the mixture along with the beans.
