We are in the thick of soup season and let’s be honest, who can ever have enough soup recipes to try? This Winter Black Bean Soup recipe is one of the fastest soup recipes I have made, coming together in less than 30 minutes perfect on busy weeknights. With minimal prep work, just chopping an onion, and the convenience of canned tomatoes and black beans it comes together quickly. Though this soup is simple don’t let it fool you, it’s packed with flavor and can be dressed up with avocado, cilantro, and sour cream, now you’ve got yourself a cozy taco in a bowl. I enjoyed adding shredded Mexican cheese and crushed tortilla chips over top of mine, but feel free to get creative with your toppings!
