Mainely Dish: Carrot Pie

Happy International Carrot Day! Do you know all of the benefits of adding this vegetable to your meals? This root vegetable is an excellent source of potassium, antioxidants, and vitamin A, and contains fiber. There are even different antioxidants based on the color of the carrots you eat, so why not mix it up? Carrots are available in orange, yellow, red, purple, and even white.

Celebrate International Carrot Day with our Carrot Pie Recipe. Carrot pie is a savory creation that resembles quiche. This recipe is high in protein, with 7 grams of protein per slice!  This recipe is also low in sodium, with only 150 mg per serving. All the more reason to add this dish to your favorite recipe rotation.
