This Sweet Potato Salad with Apple Cider Vinaigrette is a simple and unique side dish filled with flavor, perfect to make for your next get together. Sweet potatoes are a great source of fiber, vitamins A and C, and minerals. The vibrant green of the scallions provide a beautiful color and flavor contrast against the roasted sweet potatoes.

When you are buying sweet potatoes choose firm potatoes with smooth skin, avoid cracks, soft spots and blemishes. When storing sweet potatoes, store them in a cool, dark, dry place. Avoid storing uncooked potatoes in the refrigerator because it will result in a hard center and unpleasant taste.
